The meat aging, and more in particular the meat Dry Aging method, have lately became more and more popular in Italy, like anywhere else.

At the beginning the scenario was mainly driven by confusion, uncertain guidelines and improvisation.

From the close collaboration between Everlasting and the ‘Braciamiancora’ team, the Dry Aged Academy came to life, the first Academy of meat Dry Aging in Italy. The purpose of the Academy is to provide to professionals and enthusiasts the adequate tools to achieve the "perfect maturation".

We involved the best professionals in the sector to build an high profile teaching staff for the Dry Aged Academy in order to offer an educational and at the same time informative experience about the world of meat aging.

The headquarters of the Academy is the Beef Bazaar, an innovative Steak House in centre Rome, where lessons are held in person.
